Unlike other multi-day hikes in the Alps, Alta Via 1 in the Dolomites does not have easily accessible roads to huts that would allow frequent baggage transfer options.
Therefore, most people will carry their bag throughout the trip and either leave a separate bag at the airport luggage storage facility, return to a hotel they stayed before the hike to pick up bags, or send bags from start to end hotel.
